Chinese Chicken Lettuce Wraps

So I have to first start off with saying these pictures are terrible.  I only had my phone camera on me at the time and they don’t do justice to this meal.  Like at all.  (<- that was a total Taylor Swift moment (“like ever”) and I’m sorry that it happened.  Hopefully you won’t be seeing that again.  No promises though.) 

Now that I got that out of the way, this is the first time I’ve ever tried a lettuce wrap let alone make one.  They are good good good.  It really does make your house smell like an Asian restaurant.  Mine did at least.  Maybe because I didn’t go light on the soy sauce.  God bless the person who created soy sauce.  It is amazing with a capitol A. 

The first time I made this recipe was for two girlfriends that were coming over.  Side note, make this for your girlfriends.  You can make it into a whole Chinese themed night rather than just the typical pizza night.  I have a couple more recipes coming up in the next few weeks that would go great for your Chinese night but the one I do have on the blog right now are these eggrolls.  They’re to die for (if you like eggrolls of course). 

Okay, anyways.  This is more of a funny story than a story to promote this recipe but you’ll appreciate it, I think.  I know Jess will at least!  So I made this meal the first time for two of my girls that came over.  About 10 minutes before they were expected to arrive, I am in the middle of browning the turkey and I realize Jess is a vegetarian!  There was NOTHING vegetarian about this meal, which also consisted of potstickers by the way.

Holy God, you have no idea how fast I scrambled around the place to figure something else out.  They came over and I had to share my embarressing confession which ended up with her laughing her butt off at me and then even complementing on how good it smelt.  Thank heavens for good friends huh?  I threw her two eggs over medium together and she ended up putting it in the lettuce wrap with the toppings I had out.  I also bribed her to forgive me with chunky applesauce.  Pretty sure that did the trick.

Moral of the story is before you make this tasty dish, think about if who you are serving it to is a vegetarian.  You may not luck out as much as I did with your potential eaters reaction.

Chinese Chicken Lettuce Wraps

Makes 4 servings

Ingredients

1 packet stir-fry seasoning powder

1/4 cup water

2 tablespoons soy sauce

2 tablespoons fresh lime juice

1 teaspoon sugar

1 tablespoon canola oil

1 pound ground chicken breast

1 red bell pepper diced

1/4 cup water chesnuts diced

2 tablespoons scallions, thinly sliced

1 head romaine lettuce

Garnishes:  chopped mint, cilantro, peanuts

Directions

In a small bowl, combine seasoning, water, soy sauce, lime juice, and sugar.  Set aside.

Heat canola oil in a skillet over medium heat.  Add chicken, using a wooden spoon to break up the meat.

Cook until browned, about 10 minutes.

Add red bell pepper, water chestnuts and scallions, and cook 5 more minutes.

Stir in reserved seasoning mix.

Cook until liquid evaporates, about 2 to 3 minutes.

Garnish with herbs and peanuts.
